Jean-Marc Pillot, together with his son Antonin, crafts an outstanding range of both white and red wines from this highly regarded domaine based in Chassagne Montrachet. He is the fourth generation to tend to the vines, but in recent vintages, they’ve taken a more restrained approach to oak, reducing the proportion of new barrels to better highlight the purity of the fruit. His approach to vinification is notably gentle, using 100% whole clusters and relying solely on pump-overs for extraction. The wine is aged without any new oak, allowing the vibrant, juicy red fruit to shine—tempering the rustic edge often associated with this appellation.
15 months of ageing in older casks results in richly textured, concentrated wines with powerful aromatics and opulent fruit on the palate—wines that reflect both precision and depth. The wine is bursting with spice-laced notes of mentholated cherry, carried by lively energy and mouthwatering acidity.
