De Rochebouet Extra Brut Rose is a super tasty Champagne Method sparkling wine made high up in Mendoza’s Uco Valley. It is a classic blend of Chardonnay and Pinot Noir although a touch of Malbec is blended in to give it energy, depth and a touch of Argentinean flair. The wine is full of bright summer red fruit, strawberry and touches of cherry. There are beautiful autolytic notes of toasted brioche, almonds and bread but the vibrant fruit dominated. Cracking texture, fresh acidity and fine bubbles. Really top stuff.

The wine bottle aged for 12 months in bottle on its lees and has 8g/l residual sugar.

Cave Extreme is a small boutique operation which is housed within Bodegas Atamisque and headed up by Jean-Edouard de Rochebouet. Before Jean-Edouard became the main man at Bodegas Atamisque he was best known for pioneering the production of Champagne method sparkling wine in Argentina at Domaine Chandon, which is the Argentinean operation owned by Moet & Chandon. It is something of a side project, but the wines are fantastic and well-priced considering the scale of the operation and the work that is requirement to make this style of wine.
