De Rochebouet Extra Brut NV, Cave Extreme

De Rochebouet Extra Brut NV is a magnificent traditional method sparkling wine made from Pinot Noir and Chardonnay. There are classic flavours of toasted brioche, ripe citrus fruit, floral notes, almonds and apple. Where this wine really excelled is on the palate where the texture is first class, the mousse soft and the acidity finely balanced with the fruit. It is elegant, tasty and very drinkable.

The wine is bottle aged on its lees for 12 moths before release and has 8g/l residual sugar.

Cave Extreme is a small boutique operation which is housed within Bodegas Atamisque and headed up by Jean-Edouard de Rochebouet. Before Jean-Edouard became the main man at Bodegas Atamisque he was best known for pioneering the production of Champagne method sparkling wine in Argentina at Domaine Chandon, which is the Argentinean operation owned by Moet & Chandon. It is something of a side project, but the wines are fantastic and well-priced considering the scale of the operation and the work that is requirement to make this style of wine.
