Paolo Zucchetto and his son Carlo own and farm just 5.5 ha of vineyards in the heart of the Valdobbiadene DOCG; they also have holdings in the prestigious Cartizze zone.The area is a steep, south-facing slope carved out of limestone at the foothills of the Alps.Unlike Champagne, Prosecco is fermented in tank and is often vinified to leave a hint of residual sugar. Paolo however re-ferments his wine in the bottle and leaves it aging on it’s lees for three months, it will blow your mind and make you think of Prosecco in a new light.There’s an engaging nose of melon and quince, and a sophisticated freshness on the finish.
