Prosecco di Valdobbiadene 'Extra Dry' Zucchetto 2020
Zucchetto ‘Extra Dry’ Prosecco Superiore is from the Valdobbiadene DOCG and represents one of the best examples of Prosecco. It is fresh and rich with floral notes, peach, apple and a creamy texture on the palate. The bubbles are fine and elegant and have an aromatic quality to them. Paolo Zucchetto and his son Carlo own and farm just 5.5 ha of vineyards in the heart of the Valdobbiadene DOCG; they also have holdings in the prestigious Cartizze zone. The area is a steep, south-facing slope carved out of limestone at the foothills of the Alps. Unlike Champagne, Prosecco is fermented in tank and is often vinified to leave a hint of residual sugar. Paolo however re-ferments his wine in the bottle and leaves it aging on its lees for three months, it will blow your mind and make you think of Prosecco in a new light.
