Ambroise wines date back to the 18th century beginning with a humble few parcels which have now been worked over several lifespans leaving a legacy which you can taste. The wines produced here are known for their rich, opulent whites and bold, full-bodied reds that age beautifully. This Nuits-Saint-George is primarily driven by elegant fruit, yet it retains a subtle savoury nuance. Medium acidity supports the structure, complemented by earthy undergrowth tones and a whisper of spicy oak that enhances rather than overwhelms. The finish is exceptionally long and beautifully perfumed.
Maison Ambroise traces its roots back to the 18th century, when just a handful of parcels were planted around Nuits-Saint-Georges in Burgundy. Bertrand Ambroise took over the estate from his father-in-law in 1987, and today the domaine is managed by his son and daughter. Under their stewardship, the winery has embraced an organic philosophy, earning Ecocert certification in 2013. To encourage riper tannins, the team practices leaf thinning around the grape clusters, and since 2002, nearly all the Pinot Noir is destemmed. The winemaking approach remains traditional: with an extended 28-day maceration lasting between 15 and 25 days, and is then aged for 12 to 18 months in a combination of 400-litre and 228-litre barrels, a significant portion of which are replaced annually. This results in wines that embody the classic elegance, balance, and structure of traditional Burgundy.
